Easy lentil soup recipe

Cold days put me in the mood for warm lentil soup! It reminds me of when I was young since my Mom would make it a lot. It’s a really simple recipe which doesn’t require much prep time- which is perfect when you are trying to balance it all!

10 minutes prep time and 1 hour to cook over a medium flame will serve 6 with this recipe!


5 large carrots (sliced)

8 large pieces of celery (sliced)

1 medium onion (diced)

1 16 oz bag of uncooked lentils (I used the Goya brand)

5 10.5 cans of chicken broth (you can use bouillon cubes and make your own as well)

Wash your veggies, slice the carrots and celery and dice the onion-then add to a large pot. Rinse your lentils and add to your pot as well as the 5 cans of chicken broth. Cook uncovered for 1 hour. Serve with grated cheese on top. For extra flavoring add cooked ground sausage meat. For a heartier meal serve over elbow pasta.
